It's mainly cause the RT performance is basically on par with the 6800/XT and way cheaper and for me at 1080p these are pretty much all I'd need, but we'll see come next year how stock pans out they will sellout fast no doubt.

Definitely sounds like the 3060Ti would better suit you than a 6800. It'd be a phenomenal 1080p card.
Nvidia definitely delivered here. It's basically wasted the 3070, 2080S and 2080Ti. There's still room for the 3070 in the product stack, but barely. I would personally rather spend less and get a 3060Ti and more on something else, like more storage or better system fans. If I were on a GTX 970 or 1060, or an AMD equivalent, and I gamed at 1080p or 1440p, I don't see any reason to wait for AMD. I can't imagine they'll outshine Nvidia here. They had the chance with the 6800 range and they didn't.
Still, it's exciting to think how AMD will rebuke the 3060Ti. I wonder will they try to make the 6700 $450 and the 6700XT $500. I can't see how that would compete if they did that though. The 3060Ti is so close to the 3070 that it doesn't leave much room for a $450 6700 and a $500 6700XT to exist. I hope AMD try to undercut Nvidia can go $300-400 for the 6700 and 6700XT, and offer better performance per dollar than the 3060Ti, or at least equal it.
