I'm guessing if I rip to 5.1, if played on a normal dvd player/any stereo environment, depending on the decoder/dvd player, it should downscale to stereo if not in a 5.1 environment?

Well im using ripbot264 and it lets you choose one or the other.

Im guessing most dvd players can downscale from 5.1 to stereo?

Should be fine. I use DVDshrink and it downscales to stereo in a stereo environment, and keeps 5.1 at all other times.
