you haven't mentioned a psu. if your psu can handle them. two 460's sounds good.

just have good airflow in the case

Case isn't going to be an issue I don't think (Phantom). PSU may.

Your build is looking very simiar to what im putting together, you can check my initial post for it...build saga begins or something like that just above yours in the forum. I haven't decided on memory either. Reading here everyone seems to like Mushkin so im going to check it out. From my research i think im going to go with 1600mHz CAS8...not the fastest but not much of a price premium either. Startn with 6gb, then add another 6gb later. Im going with GTX 460 1gb in sli, the other option in this range ati 6850 crossfire, similar performance and even lower power requirements...I think they only require 1 power connector.
